Winter Quinoa Steak Stroganoff


  • 1 tbl sp butter salted or non
  • 1 tbl sp flour
  • 1 cup of milk
  • 4 or 5 mushrooms
  • 1/2 pound shaved steak
  • half an onion chopped
  • 1/2 green pepper chopped
  • 1 garlic clove minced
  • bean and quinoa elbow pasta
  • 1/4 cup of brandy
  • 1/4 cup of parmesan cheese
  • 4 or 5 green olives
  • herbs de Provence and salt and pepper to taste2016-01-02 (4)


Lightly salt the water to boil for the quinoa pasta.  Put a pan on with a light amount of oil.  Once the pan is hot add the shaved steak.  When the steak is browned add the chopped onion, olives, garlic and pepper.  2016-01-02 (5)
Once the water is boiled add the quinoa pasta and let cook for 5 minutes.  Quinoa pasta is very fragile so make sure it doesn’t over cook or you’ll get a mush.  Heat the brandy in a saucepan and let simmer for a couple minutes. At this point check the pasta and if needed take off the heat and put through a strainer and place to the side until the sauce is completed.  Add in the butter until melted and then add the flour until it forms a paste now add the milk.  Once you have a good roux consistency add the parm.  It should be a saucy semi thick consistency.  If it’s too thick…add more milk until its thinner if its too thin add more flour a tsp at a time.  When it’s ready add into the meat and veg pan and let sit for a couple minutes on low heat and let the flavors mix together. 2016-01-02 (6) Add salt, pepper, and herbs de provence for taste. Put the quinoa on a plate and add the sauce and voila.  Add some basil as garnish for a nice tasty finish.
